Onsite Catering
IOnsite catering is only available at sites that allow an open flame. Almost all California state parks allow open flame. All onsite events include tables, and tablecloths for food only. Compostable paper plates, plastic utensils, napkins, wetnaps, sauce, lemonade, iced T, water and cups. We can provide Boca Burgers upon request. Family style service is also available for all catering packages.
Boom-Chicken-Boom $17 per person
Whole Smoked Chickens chopped to order in front of you. Mac and cheese, iceberg salad with ranch dressing, sliced watermelon, and Kings Hawaiian rolls. Comes with South Carolina mustard sauce, spicy and mild BBQ sauces. Lemonade, honey mint iced T and water.
Doggy & Patty $17 per person
Hamburgers and hotdogs cooked in front you. Sides of grilled corn on the cobb, and potato salad. Trays of sliced red onion, sliced tomatoes, iceberg lettuce, hotdog and hamburger buns. The usual delicious condiments, mustard, mayo, and ketchup. Lemonade, honey mint iced T and water.
Pit Master Special $36 per person
Slow smoked baby back ribs, smoked brisket, pulled pork marinated in a tangy North Carolina BBQ Sauce, boneless skinless chicken thighs, baked beans, mac & cheese, coleslaw, Kings Hawaiian rolls, potato salad, Caesar salad. Lemonade, honey mint iced T and water.
The BBQ Elite $50 per person
Tri-tip in our signature jack and coke marinade, served medium rare. Sliced leg of lamb, marinated in dry spices and yogurt. Grilled chicken breast cut in half, with garlic, rosemary, and extra virgin olive oil. Sides of mac and cheese, collard greens, potato salad, and Caesar salad, Kings Hawaiian rolls. Lemonade, honey mint iced T and water.
Ranch and Reef $100 per person minimum 25 people
Smoked Bone-in Prime Rib, we recommend medium-rare but we are happy to cook to any temperature you would like. Live Maine Lobsters poached onsite in water and butter. Sides include mac and cheese, collard greens, cornbread with honey butter and Caesar salad, and Kings Hawaiian rolls. Sauces include horeradish cream sauce, garlic butter, spicy and mild BBQ sauce. Lemonade, honey mint iced T and water.
Texas Pig Roast $19 per person
two onsite chefs 15 ft. custom trailer smoker, or a 6 ft wood burning Santa Maria grill trays of potato salad, coleslaw, kings Hawaiian rolls, lemonade, honey mint iced tea, water, North Carolina vinegar sauce (an old family recipe, great on pork), plus classic spicy, and mild BBQ sauce paper plates, plastic utensils, serving utensils, paper towels, tables, and tablecloths for food, Boca Burgers upon request
